My Top Five Filipino Desserts

In Batangas, my mom's hometown, we do fiesta every June 12th. The best thing about Fiestas is the food!

These are the usual desserts that are served during fiestas or for just any occasions at all. These can be eaten as desserts or as "merienda"/snacks alone.

Leche Flan

Ingredients

1 1/2 cups sugar
2 tbsp water
1 can Condensed milk
4 cups Evaporated milk
9 yolks
3 eggs
1/4 tsp grated dayap rind (optional)
1 tsp dayap juice (optional)

Procedures:

Place sugar and water in a heavy-bottom saucepan and cook over low heat, swirling pan every so often to prevent sugar from “crystallizing”, DO NOT MIX. Cook until golden in color, this will take about 10 to 15 minutes and pour on 3 leche flan molds. Set aside.

Place condensed milk, evaporated milk and the rest of ingredients in a bowl and mix well. Pour over caramel and cover with foil. Steam in barely simmering water for 30 to 45 minutes. Making sure the water doesn’t boil so as to have a very smooth flan. Let cool and chill before unmolding.


Pastillas

Ingredients

1 can Condensed milk
1/4 cup Evaporated milk
3/4 cup powdered milk
sugar

Procedures:

Place the condensed milk, evaporated milk and powdered milk in a pan and mix well. Cook over low heat, stirring continuously until mixture starts to forms a soft ball. Place in a bowl and chill for at least 4 hours.

Form into logs and cut into 2” pieces. Roll in sugar and wrap in colored paper if desired.


Graham Mango Refrigerator Cake

Ingredients

3 ripe mangoes
1 pack graham crackers
1 can condensed milk
2 packs all-purpose cream
1/2 cup melted butter (cooled)
1/2 pack gelatin (diluted in 1/4 cup hot water then cooled)

Procedures:

Prepare a square ceramic tray and arrange the first layer of graham crackers then set aside.

Slice the mangoes in thin shape then set aside also. Prepare a mixing bowl then place the all-purpose cream, condensed milk, melted butter and diluted gelatin. Mix them all together.

Spread the mixture using spatula on top of the graham and arrange the sliced mangoes in the layer. Repeat the same procedure by starting with graham crackers then cream and mangoes.

Chill overnight for best result.

Slice and serve cold.


Buko Salad

Ingredients

1 can pinoy fruit cocktail in can (with nata in it)
1 1/2 can condensed milk
1/2 pack all-purpose cream
3 pcs. Buko (shredded)

Procedures:

Place the shredded buko in a huge mixing bowl. Remove all the cherries from the fruit cocktail then set aside. Place the rest of the fruit cocktail in the mixing bowl. Add condensed milk to the mixture and carefully mix it. Pour the all-purpose cream and slowly mix it again. Place the salad in a plastic container then top with the cherries. Chill for 4-8 hours, then serve cold.


Maja Blanca

Ingredients

2 cans condensed milk
1 cup coconut milk
4 box plain alsa gelatin diluted in 2 cups of water
1/2 cup kernel corn syrup from the can
1/4 cup kernel corn
2 tbsp. vanilla extract

Procedures:

Heat a casserole under medium temperature. After 2 minutes, pour coconut milk. Allow the liquid to boil for 10 minutes then add condensed milk. Stir smoothly then simmer it for another 10 minutes.

Stir consistently then add the corn syrup and vanilla extract. After 10 minutes add kernel corn.Then after 2 minutes add diluted gelatin. Stir until smooth.

It’s done after one minute.

Prepare plastic or ceramic container either oval or square. Pour the Maja Blanca in the container then top with kernel corn. Allow it to cool and compact its form for 30 mins to an hour.

Serve hot or cold.

Yup. I have a new phone and this is because of Chloe. She knocked out my phone so hard on the bathroom floor that made the monitor useless for two whole days! I went to a near Anycall service center and actually planned to repair it but they said that I had to pay for around 25,000won for a part replacement, I just thought of buying a new one since there are a lot of free phones nowadays and I had used my phone for more than two years. To pay 25k for an old, really full of scratches phone (because of Chloe) is too much for me since sooner or later I also need to replace it. In the end, it turned out not to be a free phone(850,000 won / $690). Tommy bought this phone for me saying that I need a "much, much better phone" because of his daughter...hahaha! and because I've been always using free phones since I came here in Korea (which are NOT really FREE PHONES because of the additional services included in the phone bill for the first few months).
